Great Harvest here in Mentor, Ohio and the Lariccia family would like to introduce you to a traditional recipe from Southern Italy. Pasta and breadcrumbs is a simple dish created by the less fortunate who could not afford other ingredients. They would prepare the breadcrumbs using leftover bread from days before and, when possible, add two other ingredients that were typical of home cooking at the time: salted anchovies and dried chili peppers. This dish is traditionally served on Christmas Eve, but can be served all year long, hot or cold.
- 1 lb spaghetti
- 1/2 cup Italian seasoned Great Harvest bread crumbs
- 1/4 cup extra virgin olive oil
- 2 Tablespoons minced garlic
- 4 salted anchovies
- 1 pinch hot chili peppers
In a large pan boil water for pasta and add salt to the water. Add spaghetti and let boil until al dente. Once pasta is tender, drain in colander and set aside. In the meantime, rinse the anchovies well under running water and debone. Place a pan over low heat and add half the olive oil. Once the oil is hot, add the anchovies and garlic. Cook for a couple of minutes, until the anchovies break down. While the anchovies and garlic are cooking, place another pan with the remaining oil over medium heat. Add the breadcrumbs and chili powder. Toast the breadcrumbs for 2 to 3 minutes, or until they are golden. Add the anchovy mix and the spaghetti and toss until coated and hot. Serve immediately or chill and serve cold.
